We love cooking with honey because it's an all-natural sweetener, and, since it just so happens to taste sweeter than sugar, you can get more sweetness for fewer calories when you use it instead of sugar. (Not that we're counting calories in today's recipe🤤)

 

What if I want to use even more honey?

Pro tip for all the real honey recipe folks out there: you can use honey instead of sugar to glaze the walnuts in Step 1. To make sure you don't burn the honey, simmer equal parts honey and water in a low pan over medium heat until thickened. Then add the walnuts and stir often.

INGREDIENTS

2 cups sugar
2 cups water
2 cups walnut halves
1/2 cup mayonnaise
3 TBSP Local Hive Honey
1 TBSP sweetened condensed milk
2 lbs colossal shrimp, peeled and deveined
1/2 cup cornstarch
1/2 tsp salt
2 TBSP vegetable oil
1 cup dry jasmine rice, steamed
Green onions, for garnish

DIRECTIONS

1. Bring water and sugar to a boil in a large pot.
2. Add 2 cups walnut halves and boil for 2 mins.
3. Spread out on parchment paper to cool.
4. Combine mayonnaise, Local Hive Honey, and sweetened condensed milk in bowl. Set aside.
5. Toss shrimp in salt and cornstarch until covered.
6. In a skillet or pan, heat vegetable oil over medium heat. Pan fry shrimp for 2 minutes per side until golden and crispy.
7. Toss shrimp in honey sauce until coated.
8. Top rice with shrimp, glazed walnuts and green onions.
